Wine with Chocolate Dessert

Wine with chocolate, two of my favourite things so I am happy to report back on a wonderful experience I had with a wine with chocolate dessert pairing this week.

So when pairing wine with chocolate, the absolute important fact here is that, for most people, if you match sugar sweetness in food with a dry wine it will make the wine taste more bitter, thinner, less fruity, and generally not very pleasant. Of course if you are a very tolerant taster then even dry wine with chocolate would not be as unpleasant as it would be to a sensitive taster, for the very sensitive taster … forget it.

But as we learn on the WSET Level 1 course wine with chocolate can be a match made in heaven even for our sensitive tasters, it is just a case of making sure the wine has enough residual sugar in it to match with the sugar in the chocolate, so the less sugar, i.e. the ‘darker’ the chocolate, the less sweet the wine needs to be.

So my heavenly wine with chocolate moment this week was Mas Amiel Maury 2009, from the Roussillon in the south of France, which had delicious ripe fruit and spicy flavours, it was rich and full in flavour, and of course sweet. So my dessert was a summer pudding, with lots of liquorice flavours which I combined with a dark, bitter chocolate ice cream.
