Matthew’s career path

Matthew Dakers career in the drinks industry began over 20 years ago at ‘Charlies America Diner’ where he worked as a cocktail bartender.  Over the following years Matthew worked in some of the most famous bars throughout the world including:- Blu Bar – an independent cocktail bar that worked with brands to further education and improve techniques.  Dry Martini Barcelona – one of the oldest and finest cocktail bars in Europe. Etiquette and classic cocktails. Hoxton Pony London – owned by the son of Salvatore Calabresse and winner of the UK’s best bar 2009. Whistling Shop London – working alongside Ryan Chetiyawardana and learning the molecular side of the industry.

Achievements

As a way of furthering his career and keeping his techniques fresh and modern Matthew entered many competitions.  In 2009 he won the Cutty Sark 2009 London, Drambuie 2010 and 2011, Bacardi Legacy 2010, World Tiki Challenge Miami Rum Renaissance 2011 and was nominated in 2009 and 2010 for Class UK bartender of the year

The next step

After working as a bartender for so many years Matthew decided he wanted to work with brands and in 2010 he began working as a Brand Ambassador. Between the years of 2010 to 2013 Matthew was brand ambassador for Chartreuse UK and Europe, which included a charity run of 140 miles in 6 days where he raised money for Murray Stenson the man responsible for reviving the cocktail ‘Last Word’.  Matthew then went on to work as brand ambassador for Stolichnaya UK, Europe and Asia 2013 – 2016

Launching his own brand

After working with brands for six years Matthew took the bold decision to launch his own brand! Working with two of his best mates he launched Jindea, Single Estate Tea Gin in May 2017 and the brand was an immediate success.

Matthew now works with the famous London Cocktail Club Group as their Head of Training and Recruitment. After so many years of bartending and learning from the best it was time to give back to the next generation.

London Cocktail Club was opened in 2008 by his two friends JJ Goodman and James Hopkins. Matthew now works with over 60 bartenders in the group to help and maintain their training to ensure they develop into the bartenders they want to be.
